St. Roch Market appeared on the FOX 8 Morning Show with two back-to-back cooking segments. Operator Kevin Pedeaux brought two vendors into the studio kitchen to prepare Lent-friendly dishes live on air with host Rob Krieger.
Barbecue Jackfruit Sandwich from FRSH Juice & Food Company
FRSH Juice & Food Company is one of the newest vendors at St. Roch Market, located at 2381 St. Claude Avenue in New Orleans. Owner Jajuane Harris joined Kevin in the FOX 8 kitchen to build a barbecue jackfruit sandwich, a plant-based pulled pork alternative that qualifies for Lent without tasting like a compromise.
Lawan seasoned the jackfruit with barbecue sauce, salt, pepper, and garlic powder, then toasted it and piled it onto a bun with coleslaw, jalapenos, parsley, and crispy onions. The texture mimics shredded pork so closely that Rob Krieger had to be reminded twice he wasn't eating meat.
FRSH Juice & Food Company also brought their signature Yellow Juice, made with orange, pineapple, ginger, honey, and lemon. Kevin called it "a whole medicine cabinet in a cup," especially relevant during cold and flu season.
Grandmother's Shrimp Courtbouillon from Salted Pearl Oyster Bar
Salted Pearl Oyster Bar is the seafood anchor at St. Roch Market, run by Executive Chef Tyger Hale. Chef Tyger cooked his grandmother's shrimp courtbouillon live on FOX 8 with Rob Krieger. Shrimp courtbouillon is a classic New Orleans dish, a slow-cooked tomato-based stew that has largely disappeared from restaurant menus.
Chef Tyger walked through the process on air: a peanut butter-dark roux that cooks all day provides the base, then the shrimp and seasoning come together fast. He finished the dish with parsley and served it straight from the pan. Rob called it exactly what it is: Friday-during-Lent food, done right.
Salted Pearl Oyster Bar serves a full lineup of seafood during Lent at St. Roch Market, including charbroiled oysters, oysters Rockefeller, BBQ shrimp, crab mac and cheese, and seafood pasta. Happy Hour runs Monday through Friday from 3 to 5pm with $1 raw oysters at Salted Pearl and $7 cocktails at Roch's Reprieve.
St. Roch Market: 12 Vendors, One Roof
Kevin used both FOX 8 segments to make the case for St. Roch Market as the place where groups don't have to agree on one restaurant. "There's 12 different restaurants in that one room," he told Rob Krieger. "If you can't find something, you are not hungry."
St. Roch Market is a historic New Orleans food hall and incubator for independent food businesses at 2381 St. Claude Avenue. It is open Sunday through Thursday 7am to 9pm, Friday and Saturday 7am to 10pm, with free on-site parking.
